Lavender simple syrup is easy to make and gives drinks a delightful floral flavor.

Lavender simple syrup is a versatile ingredient that can be used in a variety of recipes to add a bit of floral flavor and sweetness.

It is most commonly used in cocktails, coffee and lemonade, but it can also be used in desserts or even as a topping to waffles or pancakes.

It store for up to 2 weeks in your fridge, so it's great to make up a batch and keep on hand for when you might want to add some. Especially during the spring and summer when we are craving fresh and floral flavors.

What to Use Lavendery Syrup for

You can use lavender syrup for more than just coffee. Here are some other ways to use homemade lavender simple syrup.

  • iced tea
  • add lavender syrup to steamed or warm milk for making a lavender latte
  • swap some of the brown sugar for honey to make lavender honey syrup for tea
  • add some lavender syrup to seltzer or sparkling water for a lavender-flavored soda

Tips to Make the Best Lavender Syrup

  • You can use lavender you've grown in your garden. If doing this, make sure you don't use any pesticides when growing it. Use lavender buds that are not open yet, but that have turned purple.
  • If you are having a problem with the syrup crystallizing, this can be because it was boiled for too long. Make sure to turn down your heat as soon as it boils. Another thing you can do is to add in a teaspoon of lemon juice to prevent this from happening.
  • If you use store-bought lavender, you can use culinary lavender or dried lavender buds. You can find these at natural food stores, Mountain Rose Herbs, or Amazon.
  • Make sure to use filtered water
  • Steep the syrup for a longer period of time if you prefer a stronger flavor. If you want the flavor to be really light, decrease the steeping time to around five minutes.

This lavender syrup recipe can be stored in the fridge in an airtight container for 10-14 days.

You can freeze lavender syrup for longer storage. Store in an airtight, freezer-safe container in the freezer for up to 3 months. You will notice that it doesn't freeze completely and this is OK and normal.

Ingredients for Lavender Syrup Recipe

  • granulated sugar
  • water
  • dried lavender flowers

How to Make Lavender Syrup

Step 1: Add water, sugar, and lavender to a medium saucepan and cook on medium heat, stirring continuously.

Step 2: Bring to a boil. Once mixture starts to boil, remove from heat. It should take about 8-10 minutes to come to a boil.

Step 3: Let syrup steep for about 10 minutes. You can taste the syrup to make sure it has enough lavender flavor. If you want the lavender flavor in your syrup stronger, let the syrup steep longer.

Step 4: Place a fine mesh strainer over a glass jar. Pour into the strainer to strain out the lavender buds from the syrup. Discard the flowers.

Step 5: Allow the syrup to completely cool before placing a lid on it.

You can store in the refrigerator for up to 2 weeks.

The sugar to water ratio is 1:1.  It's easy to adjust the recipe to the amount of syrup you are trying to make.
