Pumpkin Pie Overnight Oats

Pumpkin pie overnight oats are a tasty and easy breakfast option that can make your mornings smoother.

My cousin first told me about pumpkin oatmeal a few years ago. I was skeptical, but it's absolutely delicious!

They are perfect for fall mornings or anytime you crave a bit of autumn flavor.

Ingredients for Pumpkin Pie Overnight Oats

Ingredients: Old-fashioned oats, Pumpkin puree, Whole milk, Chia flax seeds, Pecans, vanilla extract, brown sugar, and Pumpkin spice.

Whole milk

Old fashioned oats: These are preferred for overnight oats given their texture, but quick oats can be used if needed. Steel-cut oats are not recommended as they require longer soaking times.

Pumpkin puree: Make sure you use pure pumpkin puree and not pumpkin pie filling.

Brown sugar: You can adjust the amount of sugar based on your preference.

Pumpkin spice and Vanilla extract: These give the oats their distinctive pumpkin pie flavor. Feel free to adjust the amount of pumpkin spice to suit your taste.

Chia and flax seeds: These add a nice boost of omega-3 fatty acids and fiber. If you don’t have both, you can use just chia seeds or just flax seeds.

Pecans, chopped: Walnuts or almonds can also be used if preferred.

How to Make Pumpkin Pie Overnight Oats

Start by putting all the ingredients into a jar or container that you can close tightly.

Once everything is in, stir or shake the mixture well so that the ingredients are evenly combined.

After mixing, place the sealed jar or container in the refrigerator. Let it sit for at least 4 hours, but it's best to leave it overnight for the flavors to blend well.

When you're ready to eat, you can enjoy your pumpkin pie overnight oats straight from the fridge or heat them up a bit.

For a special touch, add a little whipped cream, sprinkle some pumpkin spice, and toss on a few pecans as a garnish.
