If you love rocky road ice cream and fudgy brownies, you'll love this rocky road brownies recipe. They're a bit like your favorite ice cream, but in the form of a rich and decadent brownie!

The rocky road topping has gooey marshmallows, chopped nuts, and chocolate chips. You can serve them as is or top with vanilla ice cream for a match made in heaven.

There is quite a bit of wiggle room to make these rocky road brownies to your tastes. Change up the type of nuts to your favorite and same with the chocolate chips.

You'll love how easy these brownies are to make. Plus, you'll want to make this recipe whenever you get a craving for rocky road.

These rocky road brownies are great to bring to a summer pot luck or even as a holiday dessert. They are a bit different than the normal desserts and is sure to becomes one of your favorite brownie recipes.

Best Nuts to Use

You'll notice in the picture I used peanuts for this recipe. While you can use peanuts, you can also use crunchy almonds or walnuts.

They will all be delicious, but obviously, slightly change the flavor depending on which nut you choose.

Tips

If you lightly roast the nuts, you'll find it adds a depth of flavor you wouldn't get otherwise.

You can use a boxed brownie mix instead of making your brownies from scratch if you're in a hurry. You'll make the mix according to the package directions, then finish the brownies off with the topping and drizzle. Still delicious, but saves you time.

You can use whatever your favorite flavor of chocolate chips are. I used a mixture of milk chocolate and semisweet chocolate chips, but you can use gluten free chips, dark chocolate chips, etc. as well.

large eggs, brought to room temperature

Equipment

8x8 square pan

How to Make

Step 1: Preheat oven to 350°F. Grease an 8x8 inch square baking pan with either nonstick cooking spray or with butter . You can also line the pan with parchment paper .

Step 2: In a large mixing bowl mix the dry ingredients: salt, sugar, cocoa powder and flour until combined.

Step 3: Melt butter on low heat in a small saucepan or in the microwave.

Step 4: Add melted butter, eggs and vanilla to flour mixture, beating until smooth.

Step 5: Add chocolate chips and fold them into the brownie mixture. Then, spread batter evenly in prepared pan.

Step 6: Bake for 30 mins in preheated oven or until a toothpick inserted near the center comes out clean.

Step 7: Cover the top of the brownie base with mini marshmallows, nuts and chocolate chips.

Step 8: Bake for 4 mins to roast the marshmallows.

Step 9: In a small bowl mix all ingredients for the drizzle together. Add drizzle to a pastry bag or a zip lock bag and snip off a corner. Immediately pour or drizzle chocolate topping over warm brownies.

Step 10: Let brownies cool on a wire rack before cutting.

Enjoy rocky road brownie as is or add a scoop of vanilla ice cream to the top for the ultimate indulgence!

Ingredients

Batter

  • 1 cup granulated sugar
  • cup cocoa powder
  • ½ cup butter melted
  • 2 large eggs room temperature
  • 2 tsp vanilla extract
  • ¾ cup all purpose flour
  • ¼ tsp milk chocolate chips

Topping

  • 5 oz mini marshmallows
  • ½ cup nuts chopped
  • ¼ cup semi sweet chocolate chips

Drizzle

  • ¼ cup butter melted
  • ¾ cup powdered sugar
  • 1 tbsp cocoa powder
  • 1 tbsp whipping cream

Instructions

  • Preheat oven to 350°F.
  • Grease 8x8 pan.
  • In a large bowl mix salt, sugar, cocoa powder and flour until combined.
  • Add in melted butter, eggs and vanilla, beating until smooth.
  • Fold in chocolate chips and then spread evenly in pan.
  • Bake for 30 minutes.
  • Remove brownies from oven and cover them with mini marshmallows, nuts and chocolate chips.
  • Bake for 4 minutes to roast marshmallows.
  • In a small bowl mix all ingredients for the drizzle. Drizzle over warm brownies.
  • Let cool before cutting.

Notes

Almonds, peanuts, walnuts or pecans can be used for the nuts.  I used peanuts.  Lightly roasting them will add depth of flavor.
If in a rush, use a boxed brownie mix, bake according to package directions.   Finish off with topping and drizzle.
Use your favorite chocolate chips for this recipe.  I used a mixture of milk and semi sweet but gluten free chips, dark chocolate, etc will also work.
